Regency Dish: Cauliflower Ragout

This recipe appeared in the 1803 The Art of Cookery.  Cullis, in this instance, refers to a coulis or a sauce made with the juices of a roasted meat or vegetable.  In the case of the above, it was likely a brown gravy the cauliflower was prepared in.
