Found in The Complete Servant: Being a Practical Guide to the Peculiar Duties and Business of All Descriptions of Servants (1825) is this diagram and description of the different cuts of mutton. This follows a recent post on cuts of beef and veal.

These diagrams and descriptions are intended for housekeepers or other servants to give instructions for picking out meat at market.
